Cate 8/365

It's been a wonderful year for zucchini and I've had two monsters
sitting in my fridge for weeks now. Oh, sure, I could have made bread
out of it, but what's the fun in that? Instead I did a chocolate
zucchini cake with Hershey's cocoa icing. Except for the middle being
a bit less-done than I would have liked, it came out beautifully and
it's every bit as moist as it looks in the picture. I brought it to
work and within a couple of hours it was pretty much gone, the pan all
but licked clean. I'd call that a smashing success!
