Comfort food. Rainy, cool weather inspired me to make a huge batch of
cheesy chicken chowder.

recipe:

4 boneless skinless chicken breasts
1 onion, chipped
3 carrots, sliced
3 potatoes, diced
4 ribs celery, sliced

Put all these into a pot and add water to cover. Bring to a simmer and let it gently boil for an hour.

Pull out the chicken and set aside. Drain off about half the water. Add about 1 c. of half and half.

Start to stir in:

cubed velveeta (I know, processed cheese food. But it gives a specific creamy texture that can't be got with cheddar)

Keep tasting as the cheese melts until it's cheesy enough for you.

Stir in as much frozen corn as you like.

This freezes well and is easy to edit to your own tastes. (Peppers, broccoli, etc.)
